Chicken Tikka Masala

I bought one of those packets of spices pre-measured to make a certain recipe and it was so good that I decided to share it here!

Ingredients

  • 2 tbsp of butter
  • Chicken
  • 1 cup of chopped onion
  • 2 tbsp of lemon juice
  • 540ml of diced tomatoes
  • 1/3 cup of whipping cream (35%)
  • 1 1/2 tbsp of cornstarch
  • 1/2 tsp of salt

Spices:

  • 2 tsp of Club House Paprika
  • 1 tsp of Club House Dehydrated Minced Garlic
  • 1 tsp of McCormick Gourmet Garam Masala
  • 1/2 tsp of Club House Ground Cumin
  • 1/2 tsp of Club House Crushed Red Pepper (optional)

 

Step One

Cut your chicken in pieces. Melt the butter in a large skillet then add the chicken pieces, the onion and the lemon juice. Sauté for 10 minutes.

Stir in all the spices, except for the Red Pepper. Simmer for 1 minute while stirring constantly.

Stir in the tomatoes until well mixed, then combine the cream, the cornstarch and the salt and gradually add the mixture in the skillet. Stir in the Red Pepper to taste. Bring to a boil then reduce the heat to low. Simmer for 5 minutes or until thickened. Don’t forget to stir frequently

Verry Berry Cake

Ingredients

I won’t be putting measurements because I just went to taste.

  • 9×9 inch pan (or bigger if you need more servings)
  • Strawberries
  • Blueberries
  • Cool Whip (or some other brand)
  • Graham Crackers (the grocery store didn’t have any so I used another brand again)
  • Chocolate chips

 

Step One

Start with a layer of Cool Whip then put some graham crackers

Put another layer of Cool Whip then some blueberries and some chocolate chips

I wanted to do another layer of Cool Whip and crackers before another layer of fruits, but I didn’t have enough space or enough Cool Whip so I just did another layer of Cool Whip then some more blueberries and chocolate chips. Put in the refrigerator and you’re done!

 

I’m probably going to make this recipe again because it is delicious, but I might do it a bit differently. I found it a bit weird that the bottom layer was Cool Whip, made it also hard to serve. So next time, I think I might try to do a bottom layer of a crust made of graham cracker pieces then put some Cool Whip. I’ll try making a little note in a post someday when I try this version out.

Lasagna Soup

Ingredients

  • Ground beef
  • 3 cups of beef broth
  • 28 ounces of diced tomatoes
  • 6 ounces of tomato paste
  • 1 cup of Garden Cocktail (or any vegetable drink)
  • 2 cups of pasta
  • Salt and Pepper
  • Grated cheese

 

Step One

While your ground beef is browning in a frying pan, put some water to boil in a sauce pan and add the Garden Cocktail.

 

Step Two

Once the ground beef is brown, add the beef broth, the dice tomatoes and the tomato paste. Let simmer for about 10 minutes. Don’t forget to put your pasta in the water/Garden Cocktail once the water is boiling.

Add the grated cheese to the ground beef mix, salt and pepper.

Sweetheart Cherry Pie

Ingredients

  • Butter, melted
  • About 1 teaspoon of sugar
  • Pie dough (you can make your own, but since I’ve never done that, I just bought some)
  • Ricotta cheese
  • Cherries (There weren’t any fresh at my grocery store so I bought some cherry pie filling)

 

Step One

Preheat oven to 375°F. Roll the pie dough, flour helps the dough to not be sticky, and cut hearts (I used a cutter, of course). Line the hearts on a baking sheet with parchment paper on it.

Mix about 1 teaspoon of sugar to the cherries (I don’t know if it was necessary since I used pie filling, but I still did it). Put a bit of ricotta cheese on the hearts, then the cherries. The amount you put will depend on how much you want on it and how big your hearts are. Just remember not to put too much or else the top of the pie will burst.

Cut some more hearts in your dough and put them on top of the others. Press the edges with a fork to seel the dough. Brush a bit of melted butter on top of the pies and put in the oven. The recipe says 15 minutes, but for me it took about 25 minutes. You know your pie is ready when it’s golden brown.

There you go! A delicious cherry pie in the shape of a heart!

Sloppy Joe

Ingredients

  • Ground Beef
  • 1 cup of ketchup
  • 2 tablespoons of mustard
  • 1 1/2 tablespoons of vinegar
  • 2 tablespoons of brown sugar (The recipe says 4, but I found it was too much sugar)
  • 2 tablespoons of Worchestershire suace (optional)
  • Salt and pepper to taste

 

Step One

Put your ground beef in a pan and brown it

While your ground beef is browning, you can mix in a bowl all the other ingredients

Put the mix in the pan with the browned ground beef and simmer for about 20 minutes, or until the liquid is pretty much all absorbed.

Orange Chicken

I used to do it in the slow cooker like in the recipe above, but somehow I don’t always have time to slow cook stuff so I adapted the recipe to be able to do it in a frying pan.

Ingredients

  • Boneless chicken breats, chopped into small chunks
  • 1/3 cup of flour
  • Olive oil
  • ½ tablespoon of salt
  • 1 teaspoon of balsamic vinegar
  • 3 tablespoons of ketchup
  • 6 oz. of orange juice
  • 4 tablespoons of brown sugar

 

Step One

Put the chicken chunks in the flour and mix. Put them in a frying pan on medium heat and cook until they’re gold.

 

Step Two

While the chicken is cooking, mix the salt, the balsamic vinegar, the ketchup, the orange juice and the brown sugar together in a bowl.

 

Step Three

When the chicken is gold, add the mix of juice and let simmer for about 10 minutes, until it’s caramelized. Serve.

I cooked this batch a bit too much as you can see, but it was still delicious.

Blueberry Lemon Bars

Ingredients:

  • 1 1/2 cups of graham cracker crumbs
  • 6 tablespoons of butter, melte
  • 1/4 cup of granulated sugar
  • Zest of one lemon + 1 teaspoon of lemon zest
  • 2 large egg yolks
  • 14 oz of sweetened condensed milk
  • 1/2 cup of fresh lemon juice (I used a mix of condensed lemon juice and water)
  • 1 cup of fresh blueberries

 

Step One

Preheat the oven to 350°F and butter a 9×9 baking dish. In a medium bowl, stir the graham cracker crumbs, the melted butter, the sugar and the lemon zest until the graham crumbs are moist. Press the crumbs firmly in the baking dish and slightly on the sides. Bake this crust for 10 minutes, then let cool to room temperature.

Combine the egg yolks, condensed milk, lemon juice, lemon zest and blueberries and stir everything together until the mixture is smooth and slightly thicken.

Pour the lemon blueberry filling evenly over the graham crust and bake for 15 minutes. Cool for 10 minutes at room temperature then refrigerate until completely chilled (I put it over night to make sure).

Cheesy Sausage Pasta

Ingredients:

  • Olive oil
  • Sausage (I used mild italian sausage)
  • 1 cup of diced onion
  • 2 cups of chicken broth
  • 10 oz of diced tomatoes
  • 1/ cup of milk
  • 8 oz of dry pasta
  • 1/2 teaspoon of salt and pepper, each
  • 1 cup of shreded cheddar cheese

 

Step One

In a saute pan put some olive oil and add the onions and sausage to cook on medium until lightly browned.

Add the chicken broth, the diced tomatoes, the milk, the pasta and the seasonings. Bring the mix to a boil, cover and reuce the heat to low. Simmer that for about 15 minutes or until the pasta is tender (depending on the pasta you used. Check the box for instructions)

 

Step Three / Final Product

When the pasta is tender, turn off the heat and stir in 1/2 a cup of cheese. Then sprinkle the remaining cheese on top of your plate.

Cheesecake Bites

**So I just realized I did two 9 by 9-inch bakin dish with the recipe for one 8 by 8-inch baking dish. If you want to make two pans like I did, double the recipe listed down here**

Ingredients:

  • 18 Oreos finely crushed
  • 2 1/2 tbsp of butter, melted
  • 2 8oz package of cream cheese
  • 1/4 cup of granulated sugar
  • 2 large eggs
  • 1/2 tsp of vanilla extract
  • 1 1/3 cup of white chocolate chips
  • 1/3 cup of heavy cream
  • Cool Whip (I actually ended up just using the Cool Whip and not make the icing with the icing sugar)

 

Step One

Preheat your oven to 325º. Line a large sheet of tinfoil on two 9 by 9-inch baking dish then brush the foil with butter.

Mix your crushed oreos with 2 tbsp of melted butter until the mixture is well combined and evenly moistened.

Press the mixture in the bottom of the baking dishes.

Use an electric mixer to soften the cream cheese then add the granulated sugar and mix them together until the mixture is smooth. Then add in the eggs and the vanilla extract and mix until it’s well blended.

In a seperate microwave safe bowl, heat the white chocolate chips with the heavy cream 30 seconds at a time and stirring in between. Then poor the melted white chocolate mixture in the cream cheese mixture and blend.

Poor the mixture in the pans and bake for 40 minutes then turn the oven off without opening the oven door to allow the cheesecake to rest for about 15 minutes. Remove from the oven and let them rest at room temperature for 30 minutes then put them in the fridge for 6 hours or overnight.

Add your Cool Whip and voila! A yummy desert! I was supposed to put a strawberry on top to make a Santa hat, but there were no beautiful strawberries at my grocery store so we’ll have to settle with only Cool Whip. Like I said at the top, I did a recipe for one baking dish and split it in two baking dishes (I somehow hadn’t realized it was only for one); so if you pour everything in only one baking dish or if you double your recipe, the cheesecake bite will be thicker.

Lasagna Rolls

Ingredients:

  • 8 Lasagna noodles, cooked
  • Shredded mozzarella cheese
  • 3/4 cup of Ricotta cheese
  • 1 large egg white
  • Pepper
  • 3-4 tomatoes, sliced

Marinara sauce:

  • 1/4 cup of chopped onion
  • 28oz of crushed tomatoes
  • salt and pepper

 

Step One

Preheat your oven to 350º. Whisk the ricotta cheese and egg white together, then mix in about 12oz. of the shredded mozzarella cheesse and put pepper to taste.

Saute your onions with olive oil for about 3 minutes then add the crushed tomatoes and season with salt and pepper to taste. Bring the mixture to a boil, then reduce heat and simmer for about 25 – 30 minutes (or until you’re done with step three like I did).

While your marinara sauce is simmering, align your cooked lasagna noodles on parchment paper placed on a baking sheet. Put some of the mix on the noodles (I actually had to make another batch of the mix because I didn’t have enough) then add the sliced tomatoes.

Roll your lasagna noodles then add some marinara sauce on each of them. Make sure to cover the edges of the rolls so they don’t dry up. Then add some mozzarella cheese on top of the rolls. Bake for 30 minutes.

Don’t mind the black spot in the corner, it’s just burnt sauce on the parchment paper. There was nothing burnt on the lasagna rolls. They were delicious!
